That is one viable method of it, albeit a limited one. I have found some success in attempting to tailor the vegetable dishes to the palate in question. As an example, I have found that even Felix will eat sauteed garlic asparagus with bacon.

[Which is good, because Dedue continually fears for the health of Felix's colon. Eating nothing but meat can't be good for the digestion.]

I have come to understand that there are also a number of clever tricks that one can pull while baking that will disguise a surprisingly large amount of vegetables. Either chocolate can fix almost anything or it is alchemy, I have not yet decided which.
